Heat a teaspoon of oil in a hot pan, add the chili and the sour beans from step 1, stir-fry evenly, add seasonings and cook until slightly dry. Method 4: 1. Pick, wash and cut the cowpeas. 2. Put the whole cowpea into a pot of boiling water and cook for about 2-3 minutes. Turn off the heat and immediately put it in cold water to cool it down and take it out. 3. Chop the garlic and cut the red pepper into shreds. Add the cowpeas, then add salt, sugar, chicken essence and vinegar. 4. Heat a spoonful of oil, make sure the oil temperature is high, add the peppercorns, and when the peppercorns change color, lift the pot and pour all the oil over the chopped garlic, red pepper and cowpea, mix well, and it’s done. The garlic aroma is strong.

Method 5: 1. Rinse the Yangtze River tofu and the ribs and set aside. 2. Bring a pot of water to a boil, put in the ribs and blanch them, then remove the ribs, rinse them under cold water and set aside. 3. Put the spare ribs and Yangtze River dried tofu into the pot, add 12 cups of water, boil together for about 30 to 40 minutes, then add seasonings and serve in a soup dish.
