Add a piece of scallion, five slices of ginger, three star anises, a teaspoon of salt and two tablespoons of seasoning to half a pot of water and bring to a boil. Add the chicken feet, cover and cook for ten minutes. Take out and rinse repeatedly with cold water so that the cooked chicken feet will not be too sticky. Chop the onion, ginger, garlic and chili. Heat oil in a wok and add onions, ginger and garlic until fragrant.

Pour in chicken feet and six spoons of light soy sauce and three spoons of dark soy sauce and stir-fry for five minutes. Add chili pepper and two cups of water and bring to a boil, cover and simmer on low heat for fifteen minutes (I cooked a little too much today and the casserole couldn’t be turned over, so I changed to a larger spatula halfway through). Be sure to stir the pan halfway through to avoid burning the pot. Finally, simmer the soup over high heat, leaving about half a cup of soup. Sprinkle appropriate amount of coriander, shredded onion and sesame seeds. The rich casserole chicken feet is ready, eat it while it's hot.
