Salt and pepper pigeon recipe

1.1 Coat the pigeon with dark soy sauce (to make it look better), apply five-spice powder and soak for 10 minutes, then add brine, ginger slices, and white wine, turn on the fire and cook until the pigeon is cooked (it is OK if it can be pierced easily with chopsticks). After turning off the heat, soak the brine in the pot for about 20 minutes to let the pigeon absorb the flavor.

2.2 Prepare the ingredients: 2 pigeons, take out the internal organs, chop off the buttocks, and rinse the pigeons.

3. When the time is almost up, pick up the pigeon, apply a little honey on it, and let it air dry. (You can tie it up with a rope or wire and hang it up to dry, about 3 hours)

4. After drying the pigeon, heat the oil in a pan, put the pigeon in and fry until golden brown (or darker). Then drain the oil and cut it into pieces. Add salt and pepper to taste!
