7. Simmer over medium heat for 20 minutes and pay attention to see if there is any leakage. If it is prone to leakage, simmer over low heat for 30 minutes.

8. Add rock sugar after 20 minutes. Polycrystalline rock sugar is better than single crystal one because it has some medicinal properties.

9. Add an appropriate amount of water to avoid it becoming mushy.

10. Then simmer over low heat for another 30 minutes. When the white fungus has melted and the soup has become thicker, it is ready to be like a soup.

11. After turning off the heat, do not pour out the white fungus and let it simmer in the pot to cool naturally.
