1. Cut the beef into thin slices before it is completely thawed;

2. Put salt, soy sauce, sugar, baking soda and cooking wine in a large bowl, and mix with your hands until the meat is sticky. Then add 1 tablespoon of water and mix until the water is completely absorbed by the meat. Add corn starch and mix well. Finally, add salad oil and mix a few times.

3. Place the meat slices in a sealed box and place in the refrigerator for 2 hours or a little longer;

4. Bring the pot to a boil and blanch the snow peas first;

5. Turn on high heat again. When the oil is boiling, hold the strainer with the beef in your left hand and use a spoon in your right hand to pour the hot oil onto the surface of the beef.

6. Use a spoon to turn the beef over, then pour hot oil on it until the beef is 90% cooked. Serve, stir-fry the snow peas slightly, and place the beef on top of the snow peas. This way, the meat and vegetables complement each other, and the oil is red and green.
