The world is so big that there are all kinds of wonders. In fact, to put it bluntly, open-back fish is not a type of fish, but all fish that have been open-backed (cut open from the back) are called open-back fish. So, what are the methods of freezing open-back fish?

Ingredients: a medium-sized fish, green onions, ginger, and red pepper;

Seasoning: 1 tablespoon of steamed fish soy sauce, 1/2 tablespoon of soy sauce, a little salt and MSG, and 2 tablespoons of cooking oil.

1. Defrosting the fish:

Put the fish directly into a basin, add water to cover the fish, put a small spoonful of salt in the water and let it dissolve naturally. This will not damage the fish body and will not cause loss of nutrients.

2. Method:

Ingredients: a medium-sized fish, green onions, ginger, and red pepper;

Seasoning: 1 tablespoon of steamed fish soy sauce, 1/2 tablespoon of soy sauce, a little salt and MSG, and 2 tablespoons of cooking oil.

1. Wash the fish, green onion, ginger and chili and prepare them.

2. Cut the ginger into 5 or 6 slices and cut the rest into shreds; cut the green onion into shreds; cut the red pepper into shreds.

3. Use a knife to cut the fish backwards and downwards from the connection between the fish meat and the fish bones on both sides to the tail of the fish.

4. Use salt and a little MSG to evenly coat the fish meat, including the belly.

5. Spread the ginger slices on the bottom of the plate.

6. Pull open the fins on the fish's head so that the fish stands in the middle of the plate.

7. Sprinkle the green onion slices on the back of the fish.

8. Bring water to a boil in a pot, put the fish into the pot and steam over high heat for 5 minutes.

9. After removing from heat, heat the cooking oil in a pan. Remove the freshly steamed shredded ginger and green onion, replace them with new shredded ginger, green onion and red pepper. Pour the steamed fish soy sauce on the steamed fish, and pour the oil on the fish body.

3. Notes:

Frozen fish cannot be thawed in a microwave, otherwise the nutrients will be lost. It cannot be thawed directly in hot water, as this will cause the fish to lose its freshness and become tough. If you are in a hurry, you can put it under the tap and run it under cold running water, which will also speed up the thawing process.
