How to make three-flavor flower rolls

1. Ingredients: flour, beef, salt, scallion, ginger, soy sauce, sesame oil, pepper, Sichuan pepper powder, yeast, water, chicken essence, bean paste filling (I realized I didn’t take a photo after I chopped the beef filling)

2. Add yeast to warm water and mix well. Pour the evenly stirred yeast water into the flour to fully blend the water and flour. Use your hands to knead the flour until it is shiny (hand shiny, bowl shiny, and flour shiny). Then roll the dough into a ball and cover it with plastic wrap. (I put it directly in the bowl and covered it with a lid) After 2 hours, it has doubled in size. Take it out and expel the air. Continue to knead it into the same size as before fermentation, and continue to let it rise for 30 minutes.

3. Wash and chop the green onion and ginger, and mince the beef

4. Mix all the chopped fillings together, add pepper, Sichuan pepper powder, soy sauce, chicken essence, ginger, onion, salt and sesame oil and mix well. Leave some chopped green onions

5. Take out the dough and start making flower rolls. Use a rolling pin to roll the dough into a rectangular thin sheet about 3 or 4 mm thick. Apply a layer of beef filling evenly on the rolled dough. The same goes for the flower rolls with red bean paste filling. For the chopped green onion ones, apply a layer of clear oil evenly on the dough, sprinkle with chopped green onion evenly, and then sprinkle with a little salt.

6. Roll up into a long strip from bottom to top

7. Cut the rolled dough into several equal pieces

8. Rub some dry powder on the chopsticks, overlap the two cut and rolled doughs, put the chopsticks in the middle of the dough, press hard, and then take out the chopsticks.

9. Cover with a clean wet towel and let it rest for 15 minutes. I did this to steam one less pot, as my steamer is too small.

10. After boiling water in the steamer, put the buns in and steam them over high heat for 25 minutes. Turn off the heat and then open the heat again after 5 minutes.

11. You can choose any flavor you want
