How to make mushroom quiche

1. Mix yogurt water evenly and squeeze in lemon juice

2.1 Slowly pour the solution from step 1 and mix

3.2 Mix high flour and low flour, add hard butter cubes, cut and mix with a spatula or quickly rub with your hands into loose sand; then refrigerate for 5 minutes

4.1 Take out and divide into 3 equal portions, each portion is about 100g; put each piece on the chopping board, dust with flour and roll into a round shape, about 0.2cm thick and about 20cm in diameter; store in the refrigerator and take out after the mushrooms are fried. You can also fry the mushrooms in advance.

5.2 Do not knead vigorously, just mix into a ball. Cover with plastic wrap and refrigerate for 1 hour

6.1 Add olive oil to the pan, add onions, garlic slices, chopped green onions and stir-fry for a while, then add rosemary and thyme and stir-fry

7.2 Wash the mushrooms, slice them, blanch them in boiling water for 1-2 minutes, remove them and put them in cold water

8. Then add the drained mushrooms and stir-fry for about 1 minute, add black pepper and salt, stir-fry again, add about 100-150g of water, and when the juice is almost absorbed, the mushrooms are ready.

9. Remove the fried mushrooms and add shredded or peeled cheese when they are not too hot. Mix well.

10. When the dough is taken out of the refrigerator, if it is rolled into a round shape, you don’t need to trim the edges. However, my dough was too irregular in shape, so I trimmed it. After trimming, the diameter is about 19cm; place the dough on the wax paper, put the filling in the middle, and leave about 3-4cm of margin on the side

11. Fold the four sides towards the middle and wrap the filling.

12. Then brush the folds with egg wash and bake in the preheated oven at 180 degrees for about 35 minutes.
