5.2 Put a cup of boiling water next to the oven, and ferment at 28 degrees for 1 hour until the dough doubles in size. Use your finger to dip in high flour and poke a hole in the middle of the dough. If the hole does not shrink and the dough around the hole does not collapse, it is ready.

6. Exhaust the air, dust the chopping board and rolling board with powder, roll out the dough into 1 cm thick, use the donut mold to press out the shape on the dough, roll out the excess dough into dough again and press into shape, repeat this several times until the dough is used up (note that after the dough is pressed into a ring shape, do not hold it with your hands, use a spatula or scraper to prevent the dough from deforming);

7. Brush the baking tray with oil, place the formed donut dough on the baking tray, leaving a gap in the middle, put it in the oven, put a cup of boiling water underneath, set the upper and lower heat to 38 degrees, and ferment for 35-40 minutes;

8. Heat the oil pan to 80% hot, about 180 degrees (it is very important to control the temperature of the oil pan. If the oil temperature is too hot, the donuts will burn quickly, and if the oil temperature is too cold, the donuts will absorb too much oil). Fry on medium heat until both sides are golden brown.
