1. Wash the glutinous rice and soak it in cold water for at least 3-4 hours in advance. Generally soak it at noon and wrap it at night, it can also be soaked for a little longer

2. Dry rice dumplings leaves need to be soaked in advance, skip this step if they are wet. After soaking the leaves, boil them in a pot to disinfect them.

3. Pour out the juice from the canned pineapple and cut the pineapple flesh into small pieces

4. After soaking the glutinous rice, drain the water, add pineapple juice and white sugar and mix well. (If you don’t like sweet, you can leave it out.)

5. Pick up two pieces of zongzi leaves. If the leaves are small and thin, you can place them upside down. Place the leaves with the smooth side facing up

6. Roll up the leaves from the bottom to form a funnel shape. The bottom of the funnel must be tight, otherwise the glutinous rice will leak out.

7. Use a spoon to scoop a little glutinous rice into the funnel

8. Add a pineapple

9. Add glutinous rice on top and press it down with a spoon. The dumplings will taste better if they are compacted.

10. Fold the upper leaf over

11. Press down the leaves on both sides of the rice dumpling gently and wrap it tightly.

12. After pressing down both sides, fold up the remaining leaves.

13. Fold the folded tail inwards

14. Tie with string. You have to press it with your hands during the whole process, otherwise the glutinous rice will leak out.

15. A Zongzi is wrapped

16. Place a small grate at the bottom of the pot. I use a pressure cooker, so I put this in there. You can also use a steamer and just put the grate in there.

17. Pour the pineapple juice used to soak the glutinous rice directly into the pot so that it can absorb the flavor better when cooking.

19. Add water, the water should cover the rice dumplings

20. Bring to a boil over high heat, then turn to low heat and steam slowly for about two hours. The glutinous rice will be soft, sticky and have a strong flavor when it is cooked to the right temperature, so don’t steam it too short. Some people say that you can use a pressure cooker to shorten the time, but I don't recommend it. I personally feel that the food cooked in a pressure cooker doesn't taste good.
