2. Cut the dried red pepper, green onion, ginger, garlic and red onion into pieces and set aside

3. Put the wok on the fire, heat the oil, and add the dried red pepper.

4. Add onion, ginger and garlic and sauté until fragrant

5. Pour in the clams, stir-fry over high heat, then add soy sauce, sugar, a little salt, and red onions, and continue to stir-fry until the clams open.

6. Remove from the pan and place on a plate (because the quantity is large, you have to place it in a bowl). The delicious fried clams are ready.

Tips

1. When buying clams, most merchants will indicate whether the sand has been spit out. Try to buy clams that have had the sand spit out. If not, be sure to get some sea water when purchasing. Most merchants will provide this. Don’t ever believe the method of adding some salt to the tap water, it doesn’t work!

2. Make sure to stir-fry clams over high heat and don't stir-fry for too long. Most clams are cooked when they burst open. Some that don't burst open may have been dead when you buy them.

3. Try to add less salt when frying, otherwise it will easily become salty

4. Don’t forget to add some sugar to make it taste more delicious.
