Homemade pure flavor ancient meat recipe

1.1 Mix the eggs well, add salt, chicken essence, half a tablespoon of cooking wine (to remove the fishy smell), half a tablespoon of light soy sauce, white pepper powder, and a little cornstarch. Cover the pot with a bowl and marinate for half an hour.

2.2 300g pork tenderloin, I used front leg meat, in fact it would taste better with a little fat.

3. Coat the marinated tenderloin with cornstarch, add oil to a cold pan, heat the oil to 40% temperature, then fry for about 4 minutes. If there is too much meat, you can do it in several times to save oil.

4. Put the tenderloin out of the pan and fry it again in 80% hot oil until golden brown. The second frying helps to seal the oil and make the meat crisper. Put the fried tenderloin into a plate and set aside.

5. Add tomato sauce, white vinegar, sugar, and water starch (cornstarch mixed with water) to a cold pan without oil to create a silky feel. Water starch is not necessary, as sugar will also create a silky feel after boiling. Bring to a boil over low heat, stirring gradually to prevent sticking. Add 100ml of water. Keep burning.

6. Cook over high heat until bubbles appear, then add the tenderloin and stir-fry. After all the tomato sauce is applied, you can remove from the heat. Don’t fry it for too long, 20 seconds is enough. If you fry it for too long, the tenderloin will not be crispy.
