What is the recipe for making noodle nest?

I believe that everyone who has been to Wuhan knows about mianwo, which is a local specialty snack in Wuhan that has been passed down from ancient times to the present day. Especially during breakfast time, many people sell it on the street and many people eat it. Mianwo sounds like it is made of noodles, but in fact, it does not contain flour. Instead, it is made from rice paste ground from japonica rice, to which is added soybean milk, chopped green onions, table salt, sesame seeds, etc. Next, let’s take a look at the recipe for making noodle nest!

How to make fried dough

Material

4600 grams of rice, 400 grams of soybeans, 100 grams of refined salt, 500 grams of chopped green onions, 100 grams of minced ginger, 50 grams of sesame seeds, and appropriate cooking oil (no one uses sesame oil for breakfast). Traditional noodle nest does not contain flour or glutinous rice cake.

Features

It is golden in color, round in shape, with a thin and crispy middle and thick and soft edges. It tastes authentic, with the aroma of green onion, ginger and sesame, and is very popular.

Production process

1. Put the rice in a basin of clean water, wash it, remove impurities, rinse and drain, put it back in the basin, add 150 grams of soybeans, soak it in clean water until the water penetrates the rice, drain (there are electric mills and traditional stone mills), and grind it into fine slurry.

2. Soak the remaining 250 grams of soybeans in clean water until they are fully absorbed. Grind into soy milk and keep for later use.

3. Pour the rice slurry into a container (usually a basin or bucket), add salt, chopped green onion and minced ginger, mix well, then add appropriate amount of soybean milk and mix well (to promote the fermentation and foaming of the rice slurry, usually add it when frying starts). Some people are unable to control the proper fermentation of rice milk, so they add baking powder to make the dough softer. However, the alkaline baking powder changes the flavor of the dough and is not popular.

4. Put cooking oil into the pot and place it on high heat until the oil is 80% hot.

(160-180 degrees), hold an iron round nest spoon (convex in the middle), first sprinkle sesame seeds into the bottom of the nest, then scoop a spoonful of rice paste into the nest, use the edge of the spoon to draw a spoon mark along the nest, forming a hollow nest shape, put it into the oil pan and fry it. When one side is golden brown, turn out the rice nest in the iron spoon, clamp it with iron tongs, turn it over and continue frying. When both sides are golden brown, use iron tongs to take it out.

Production tips

1. When soaking rice and soybeans, it takes 3 hours in summer, 6 hours in winter, and 4 hours in spring and autumn, depending on the temperature;

2. Add soybean milk to rice milk, and add it at the right time;

3. When frying, the oil temperature should not be too high. Operate quickly and fry until the oil turns yellow.
