So just pour the marinade below over the chicken until it becomes less sticky. This will make the chicken more flavorful and colorful.

4.2 Put the cleaned chicken into the old sauce and stew it. Until the chicken is cooked through. Broiler chicken is easy to cook and only takes 30-40 minutes to cook. It can also be determined according to personal preference. (The preparation of old brine is very simple. It is made from spices, salt, soy sauce and cooking wine that can be bought in supermarkets or small vegetable markets. Spices include fennel, star anise, grass fruit, amomum villosum, nutmeg, cinnamon, sand ginger, cloves, pepper, bay leaf, Chuanxiong, tangerine peel, etc. Put the ingredients in gauze or brine bag, add soy sauce, cooking wine and water to brine. After each brine, filter out the residue and put it into a container. Store it in the refrigerator for short-term use and in the freezer for long-term use.)

5. Put 10-15 grams of sugar into tin foil and place it in the wok

6. Put the steamer curtain on top and put the braised chicken in.

7. Cover the pot with a lid and turn on medium heat to burn the sugar until the smoke comes up. Smoke for about 2-3 minutes, or according to personal preference. Do not smoke for too long to avoid bitterness.

8. Apply sesame oil to the smoked chicken.
