How to make Songhua preserved eggs

How to make Songhua preserved eggs

1. Spicy pepper and preserved egg

Ingredients: 3 preserved eggs, 3 hot peppers, 2 cloves of garlic. Seasonings: cooked oil, sesame oil, light soy sauce, and MSG. Method: Cut the preserved eggs into sprouts and chop the chili peppers and garlic. Place the preserved eggs on a plate, put chili peppers and chopped garlic in the middle, then pour in cooked oil, light soy sauce, sesame oil and other seasonings and sprinkle them evenly on the plate. Mix well before serving.

2. Spicy preserved egg flavor: delicious and juicy, a great appetizer and drink. Main ingredients: 300 grams of fresh mushrooms, 4 preserved eggs, 1 red pepper, 1 green pepper, 3 cloves of garlic. Seasoning: 30 grams of cooking oil, 2 teaspoons of sesame oil, 1 teaspoon of soy sauce, 1/2 teaspoon of sugar. 1. Wash and remove the stems of the mushrooms, cut each into 4 equal parts and drain the water, then stir-fry in a pan for 2 minutes and serve; wash and mince the garlic; wash and cut the chili peppers into rings; 2. Add appropriate amount of cooking oil into the pot, stir-fry minced garlic and chili pepper after heating, then add mushrooms, stir-fry over high heat first, then simmer over low heat until the mushrooms no longer release water and become slightly shrunken. Turn off the heat and serve; 3. Peel and slice the preserved eggs, put them into the plate with mushrooms, add soy sauce, sugar and sesame oil and mix well.

3. How to make Mianzhu Songhua Eggs : 1. Select eggs. Choose fresh chicken and duck eggs. Identify it by looking at it, checking its leaves, smelling it, taking it, floating it, etc. We must ensure good quality. 2. Ingredients. First mix the lime and wood ash, add alkaline water, mix well and then add water to make a mud. 3. Roll the mud. Put the selected fresh eggs into the paste one by one, so that the eggs are evenly covered with the paste. 4. Roll in dust. Cover the eggs with a layer of corn husk or sawdust. 5. Shipment. Put the processed eggs into the jar one by one, seal the jar mouth with mud, and put it indoors. The indoor temperature should be kept at 30℃ on the first day, and then gradually cooled to 25℃. If the weather is too hot, you can open the jar mouth to let out heat 3 days after the jar is installed, and then seal it again. 6. Dry the eggs. After 7 days, take out the eggs in the jar and dry them in the sun, otherwise they will cause alkali damage or melt the eggs.
