Cream of Pea Soup with Mint

1.1 Add oil to the pan and sauté onion until fragrant. If using potatoes, add those to the pot as well.

3.1 Add peas, bring to a boil and simmer for 5 minutes. Season with salt and pepper.

4.2 Add vegetable broth and bring to a boil. If using potatoes, cook for 15 minutes until soft.

5.1 First scoop out two spoonfuls of peas, just peas. Pour the remaining soup into a tall container and use a blender to break up all the soup contents.

6.2 Take an appropriate amount of mint leaves, chop them, add them to the soup, and cook for another 1 or 2 minutes.

7. Pour the soup back into the pot and bring to a boil.

8. Add cream and bring to a boil.

9. Sieve the soup and pour it into a soup plate or bowl.

10. If using mashed potato powder, stir in an appropriate amount of mashed potato powder to thicken the soup. Add the peas scooped out earlier and stir.
