1. Divide 180g butter into 4 equal portions, roll into thin rectangles and refrigerate for later use.

3.2 Weigh other ingredients, mix flour, sugar and salt, soften butter and add flour, knead into breadcrumbs.

5.21 Fold the dough on the left onto the butter, then fold the dough on the right. Press lightly to release the air.

6. Roll it into a rectangle again and fold the left and right sides towards the middle.

7. Fold in half again and refrigerate for 30 minutes.

8. Take it out and repeat the above steps to complete 4 folds. Refrigerate for 30 minutes each time.

9. Once done, roll it up, cut it, and you can make the egg tart crust. It can also make various pastry desserts.
