Ingredients: 250 grams of high-gluten flour, 8 grams of milk powder, 2.5 grams of yeast, 3 grams of salt, 30 grams of sugar, 165 grams-180 grams of milk, 30 grams of whole egg liquid, and 25 grams of butter.

1. Mix all the ingredients except salt and butter in the dough and knead into dough. When the dough is kneaded into a rough film, add butter and salt and continue kneading until it is complete. A relatively strong transparent film can be pulled out.

2. Put the container in the refrigerator at 5°C and ferment for 10-12 hours.

3. Leave at room temperature for 40-60 minutes to warm up.

4. Take out the dough, press it to release the air, divide it into three equal portions after weighing, roll it into balls, cover with plastic wrap and let it relax for 15 minutes.

5. Take a relaxed dough, roll it into an oval, roll it up from top to bottom, cover it with plastic wrap and let it relax for 10 minutes.

6. Roll it out into an ox tongue shape again, remove the bubbles on the edge with your hands, and then roll it up.

7. Put the dough into a toast box and place it in an environment with a temperature of about 37 degrees and a humidity of 75% to ferment until it is 80% to 90% full. 8. Place the oven in the lower middle layer of the preheated oven, bake at 170 degrees for 5 minutes, then turn to 160 degrees and continue baking for 35 minutes.

9. Cover the top with tin foil in time when coloring it, and remove it from the mold immediately after taking it out of the oven and let it cool on the cooling rack.
