1. Tofu skin has a strong bean smell, so it needs to be soaked in hot water and the water needs to be changed several times. It should be soaked for about half a day. Finally, boil the bean curd in water for one or two minutes, remove and rinse with cold water, and drain.

2. Cut the soaked and cooked bean curd into strips

3. Wash the coriander and set aside. Chop the garlic and ginger as needed.

4. Heat the pan and pour in oil. When the oil is hot, add the chopped garlic and ginger and sauté until fragrant.

5. Add bean curd shreds and stir fry

6. Pour in the abalone sauce and stir fry, but only pour in 2/3 of the required amount, which is slightly lighter than what you need.

7. After adding the coriander, pour in the remaining abalone sauce and stir-fry, then you can serve.

8. Abalone sauce is the best. Other seasonings will be a bit inferior, but you can try oyster sauce with a little sugar; or if you don’t have oyster sauce, I recommend concentrated chicken sauce; if you don’t have it, then use chicken powder or broth essence, mushroom essence, etc., and add salt and sugar to taste. But if you use this method, you need to use one spoon of starch, one spoon of chicken powder, and 9 spoons of water to make water starch. Before adding coriander, thicken the bean curd skin with a sauce, then quickly add coriander and stir-fry before serving.
