Asparagus Soup with Scallop Rice

2. Slice potatoes, dice onions, and chop coriander

5. Cut the scallops into a cross shape and add a little steamed fish soy sauce to taste

6. Put a little oil in the pan and fry the scallops

8. When the potato slices are cooked, add the Swinburne broth prepared in step 4 and the blanched asparagus. After boiling, add a little salt to taste.

9. Take out one of the salted asparagus cooked in step 8 and cut it into thin strips with a knife.

10. Pour the asparagus soup cooked in step 8 into the food processor

11. Grind into asparagus puree, add coriander and milk, and continue grinding for 20 seconds

12. Steamed rice (the ratio of Northeast rice and Jiangsu rice to water is 1:1:1.1, and it can be cooked in an electric pressure cooker in 20 minutes)

13. Pour the asparagus soup on the rice and place the asparagus shreds in the middle.

14. Place the scallops on top.
