The production process of dried tofu is relatively simple. First, you have to select fresh raw materials, soybeans, then grind the soybeans and steam them in a pot of boiling water. This way you can make delicious dried tofu. The finished dried tofu is healthy and nutritious. Let’s take a look at the specific steps below. 1. First, prepare a certain amount of soybeans. This depends on how much you want to make. Then wash it, put it in a larger container (if there is less, put it in a smaller container), and soak it for about 4 to 8 hours. See if all the soybeans have become fat. If the soybeans become fat, that's fine. 2. Then it’s time to grind the soybeans. If you have a stone mill at home, it’s best to use it. If not, use a soy milk maker and grind the soybeans into soy milk in a ratio of one to five or one to three. As shown in the picture below, I don’t advertise, so it has been blurred. 3. Put the ground raw soy milk into a pot and cook until it boils. After the soy milk boils, add the newly ground soy milk and stir constantly to avoid sticking to the pot. 4. Then use a clean white gauze cloth to wrap the soy milk and filter it. The purpose is to separate the soy milk and tofu dregs. 5. You can hang a cross on the shed and hang a square tofu bag on the four corners of the cross to form a large net bag. The boiled soy milk is poured into the tofu bag ladle by ladle, and another person shakes the tofu bag to make the pure soy milk leak out of the tofu bag and flow into the container below. 6. If there is no cross, two people can stand on each side, hold up the net bag, and pour the soy milk in while shaking it. In short, the soy milk and tofu dregs must be completely separated. 7. Slowly pour the brine into the filtered soy milk and stir constantly. Stir it for a while after adding a little brine. Patience is key in this step. Wait until you feel small lumps slowly appearing, then let it stand and cover it with the lid. 8. After a period of time, a thin layer of skin will appear on the surface, which is the tofu skin and can be eaten. 9. Wait until the tofu pudding becomes blocks below. This tofu pudding is also very delicious. If someone can’t wait for the tofu to be dried successfully, you can destroy the tofu pudding at this step. 10. Take out the tofu pudding and mash it. It should be very even, and then use a spoon to gently and evenly put the crushed tofu pudding on the tofu bun. It must be even and thin. Put a layer of gauze, a layer of crushed tofu pudding, and then cover it with another layer of gauze. Add another layer of tofu pudding. This step requires placing the tofu in a rectangular mold because the dried tofu is rectangular, and also requires squeezing. So it’s best to make one with a small wooden board, which is also very simple. Please note that there is a small hole at the bottom of the rectangular mold so that water can be squeezed out during squeezing. 11. After putting all the gauze tofu pudding in place, put the lid on the mold and squeeze it down little by little. Until all the water is squeezed out. 12. After pressing, remove the heavy object or remove the tightened screw, remove the rectangular mold layer by layer, and then separate the dried tofu bags from the dried tofu layer by layer.
