Braised Lamb with White Radish

White radish is cooked differently in every region, and the food made with white radish can also bring out the unique flavor of white radish. Ingredients: 250g mutton, 150g white radish, 1 tsp 5g wolfberry, 1 aniseed, 2 green onions, 2 slices of fresh ginger, 2 tsp 10ml cooking wine, 1 tsp 5g salt, 1/2 tsp 3g pepper, 1 tsp 5ml oil

1. Wash the mutton and cut it into 5cm pieces; wash the white radish and cut it into 5cm dice and set aside.

2. Put the mutton pieces into boiling water and blanch them for a while to remove the blood foam, then take them out and rinse them with running water.

3. Heat the oil in a casserole over medium heat, add scallion segments, fresh ginger slices and star anise, stir-fry until fragrant, add the blanched mutton cubes, add cooking wine and stir-fry evenly, pour in an appropriate amount of water and bring to a boil, then turn to low heat, cover and cook until the mutton is 70% cooked.

4. Add white radish cubes, wolfberry, salt and pepper, mix well, and continue cooking until the mutton and white radish are soft and cooked.

1. Remove the fascia from the mutton, clean it and cut it into 2 cm square pieces. Put it in water first, blanch it for about 2 minutes after the water boils, remove the blood and set aside.

2. Peel and wash the radish, then cut into 3 cm square pieces. Peel the ginger and cut into slices. Wash the green onions and cut into 3 cm long segments.

3. Add clean water to the pot and bring to a boil. Pour in the mutton pieces, add cooking wine and bring to a boil, then skim off the foam.

4. Add ginger slices and green onion segments. Change to medium heat and cook for about 30 minutes. Add the chopped radish and cook until the lamb is cooked through. Add salt to taste.
