This seemingly insignificant action, if done every day, will quietly change our lives.

Many people feel that they cannot make a delicious breakfast without a bread machine or oven at home. In fact, it is possible to make a soft and delicious breakfast without these two ingredients. Now I will teach you this method, which does not require an oven, does not require a drop of water, and only requires fermented rice wine and flour.

Fermented rice, flour, bean paste, vegetable oil

The first step is to add the flour into a glass bowl, then add the fermented rice while stirring with chopsticks. Use chopsticks to stir it into a cotton-like state so that the flour and glutinous rice wine are fully blended.

The second step is to use your hands to constantly stir and roll the flour to form a large dough. Kneading the dough requires a certain amount of strength and patience. You can transfer the dough to a cutting board.

Step 3: Put the kneaded dough into a clean bowl, cover with plastic wrap, and place it in a warm place to rise until it doubles in size.

Step 4. Sprinkle some dry flour on the chopping board and transfer the fermented dough to it. Then knead the dough to expel the air, knead it into long strips, and divide it into small, even portions.

Step 5. Take out a small dough, roll it into a ball, cover it with plastic wrap and let it rise for more than 10 minutes. Then take a small dough and flatten it with your hands, and use a rolling pin to roll it into a round piece of suitable size. Step 6. Add an appropriate amount of red bean paste, pinch the opening to seal, and then gently flatten the pancake. Then place it in a warm place for a second fermentation, which will take about 20 minutes.

Step 7. Brush a thin layer of oil on the pan, then put the fermented rice cakes in one by one and gently bake them over the lowest heat. After one side is baked, turn it over and bake the other side until the fermented rice cake expands.

Tips

1. It is best to use a frying pan when making pancakes, but it doesn’t matter if you have good skills.

2. Be sure to expel the air from the fermented dough, otherwise the surface will be uneven.

3. Add fermented glutinous rice to the dough. After it is fermented and emits the aroma of wine, there is no need to add salt and sugar.

4. When pouring the fermented rice into the flour, it is best to stir it thoroughly with chopsticks while pouring it.

The above is the method of making fermented rice cake. I make it every now and then, and my son enjoys it for breakfast. This kind of cake does not need an oven or a drop of water.
