13. Divide the dough into small pieces and roll them into dough skins (since the dough skins are made of starch and do not contain protein, they have poor gluten properties. When rolling, it is best to rotate the rolling pin along the edge. You can also use a knife to press the dough skins. For authentic siomai, the edges of the dough skins are shaped like lotus leaves. I made it for the first time and did not roll it well)

14. Add appropriate amount of fillings to the dough

16. Steam the prepared siomai for 10 minutes (spray water on the siomai before steaming to prevent the edges from drying out and hardening, so that the steamed siomai skin will be more transparent and chewy)
