Cantonese style fried noodles with soy sauce

300g ramen, 200g pork, half an onion, 4 shallots, some vegetable oil, some five-spice powder, 1 teaspoon corn starch, 3 teaspoons light soy sauce, 2 teaspoons dark soy sauce, 1 teaspoon sugar, half a teaspoon white pepper, 1 teaspoon cooking wine

1. Wash and cut onion into shreds

2. Wash the shallots and cut into 5cm long segments

3. Make fried toppings, mix and stir until sugar dissolves

4. Cut the meat into strips and marinate for 15 minutes

5. Start cooking the noodles while the meat is marinating. When the water boils, put the noodles in and cook for 2 minutes.

6. Take out and drain, rinse with cold water and drain for later use

7. Pour an appropriate amount of vegetable oil into the pot. When the oil is hot, add the shredded pork and stir-fry. When the surface changes color, add the shredded onion. When the onion softens slightly, pour in the noodles.

8. Pour in the fried ingredients and stir-fry quickly and evenly. You can use chopsticks to assist in stir-frying.

9. After the color is even, add the scallion segments and stir-fry for another half a minute.
