How to make Xinjiang rice soup

1. Prepare the ingredients. Lamb, carrots, tomatoes, potatoes, spinach, green peppers, onions.

2. Cut the mutton into small pieces and set aside

4. Chop appropriate amount of onion, garlic and dried chili for later use

13. Use a rolling pin to roll the dough into thin slices, then cut into long strips

14. Pinch the long strips into small pieces like this.

15. Put the noodles directly into the pot, and be sure to do it quickly, otherwise the ones pulled in first will be cooked while the ones pulled in later will still be raw.

16. Bring the noodles to a boil over high heat, then cook over medium heat until done. It will be done in about 2 minutes.

17. Then add the prepared spinach segments.

18. Add appropriate amount of salt and a spoonful of aged vinegar to season. Bring to a boil over high heat and then serve.
