How to soak dried shiitake mushrooms

We all know that the dried shiitake mushrooms bought from the vegetable market need to be soaked before use, because the dried mushrooms may contain some impurities in them. If they are not soaked, they may cause poisoning to our body. Some people experience nausea, vomiting, abdominal pain, and diarrhea after eating mushrooms. This is because they are not cleaned properly. So we should pay enough attention to it. So, how to soak dried shiitake mushrooms?

1. How long should dried mushrooms be soaked?

Dried shiitake mushrooms are commonly known as winter mushrooms. If they are small, they should be soaked for 6-10 hours (distinguished by warm water or cold water). If they are large, they should be soaked for 8-12 hours (distinguished by water temperature).

In our daily operations, we use cold water, soak it the night before, and eat it at noon the next day. If you think this is too troublesome, you can soak it a day or two in advance, because the mushrooms will not become sticky and deteriorate at room temperature even if they are soaked for 72 hours. What's more, we have the help of a refrigerator now, so even a week is not a problem.

Shiitake mushrooms are suitable for most people to eat. They have high nutritional value and contain a large amount of vitamin D. Although they lack vitamins A and C, they still contain a large amount of amino acid proteins such as glutamic acid, especially agaric acid, tungline acid and anserine that are not found in ordinary foods. They taste delicious and are easy to absorb and digest.

2. How to cook stir-fried green peppers with dried bamboo shoots, shiitake mushrooms

Ingredients: appropriate amount of dried bamboo shoots, 2 dried mushrooms; 1 bell pepper; appropriate amount of salad oil, a little salt.

Soak the dried bamboo shoots in water overnight, wash them clean, boil them in boiling water for 10 minutes, remove them, drain them, and set aside;

Soak the dried shiitake mushrooms in warm water and cut into shreds; wash and cut the green peppers into shreds;

Pour oil into a hot pan, add shredded bamboo shoots and shiitake mushrooms and stir-fry for two minutes, add dark soy sauce for seasoning and color, then add shredded green peppers and stir-fry for another minute until the peppers are cooked, sprinkle with appropriate amount of salt and serve.

3. How to cook chicken stewed with dried mushrooms

Ingredients: three-yellow chicken, dried shiitake mushrooms, dried chili peppers, onions, ginger, star anise, light soy sauce, cooking wine, dark soy sauce, sugar, and salt.

Cut the chicken into pieces. Blanch in boiling water. Drain and rinse. Wash the mushrooms and soak them in warm water. Chop the green onion into sections, slice the ginger, and prepare the star anise and dried red pepper. Cut the soaked mushrooms into pieces.

Pour oil into the pan, pour in the chicken pieces when the oil is hot, and stir-fry until they change color. Pour in scallion segments, ginger slices, star anise, and dried red peppers. Pour in the soaked mushrooms. Pour in cooking wine, dark soy sauce, light soy sauce and sugar and stir fry evenly.

Pour boiling water over the chicken. Bring to a boil over high heat then simmer over medium-low heat for 20 minutes. Cook over high heat until the sauce thickens. Just add a little salt to enhance the flavor.
