Coconut Bread - Tangzhong Method

The importance of diet to people is self-evident. Everyone should not take it lightly. If possible, it is healthier to cook at home. The method of making coconut bread - Tangzhong method is very simple. Friends who want to be healthy but don't have good cooking skills may wish to learn it.

1. Weigh 90g of milk and 18g of high flour. 75g butter softened at room temperature.

2. Heat the milk over low heat until it boils, then remove from heat and shake the pan 10 times.

3. Add high-gluten flour to hot milk.

4. Use a spatula or chopsticks to quickly stir the high flour and hot milk evenly.

5. Cover with damp cloth and cool to hand temperature.

6. Pour all the cooled soup into a bread bucket, add 1 whole egg liquid, 105g milk, 55g low flour, 230g high flour, 40g sugar and 3g salt diagonally, and 5g yeast in the middle.

7. Start the bread machine and knead the dough for 20 minutes until the expansion stage, then add 25g of softened butter.

8. Continue to start the bread machine and knead the dough for 30 minutes until it is fully expanded.

9. Roll the dough into a ball and put it back into the bread bucket for the first fermentation.

10. Let the dough ferment until it is 2.5 times larger than the original size. If you dip your finger into the dough with water and it does not shrink, the fermentation is complete.

11. Start the bread machine and knead the dough for a few minutes to release the gas. Then roll it into a ball, cover it with plastic wrap or a wet cloth and let it relax at room temperature for 15 minutes.

12. Use the relaxing time to make the coconut filling. Beat 50g of softened butter with an electric whisk, then add 100g of shredded coconut.

13. Continue to add 1 beaten egg and beat evenly.

14. Add 50g of milk and beat evenly.

15. Add 50g of white sugar and beat evenly.

16. Let the blended coconut filling sit for a while.

17. Roll the relaxed dough into a rectangle, then spread the shredded coconut evenly on it, leaving some on the right.

18. Fold from left to right.

19. Place the folded dough horizontally.

20. Use a plastic scraper to cut into 8 equal parts.

21. Twist into a twist shape.

22. Put it into the oven and place a bowl of hot water underneath for secondary fermentation. There is no need to turn on the oven fermentation function.

23. After the dough has fermented to twice its original size, take it out and brush it with egg liquid. Preheat the oven to 200 degrees.

24. Place the cakes in the preheated oven on the middle and lower levels. (Because my baking tray is not big enough, I divided it into two) Bake at 180 degrees for about 20 minutes.
