How to make chiffon cake square mold

1. List of all materials: sprinkle low-gluten flour and corn starch three times, separate egg whites and yolks.

2. Beat the egg whites first. Use a whisk to beat at high speed until they form coarse bubbles for about 1 minute. Add some lemon juice.

3. When coarse bubbles appear, add 85 grams of fine sugar and beat at high speed until grooves appear, about 1.5 minutes.

4. Put the beaten egg white in the refrigerator immediately for later use.

5. Beat the egg yolks, add 25 grams of fine sugar, some vanilla extract and salt, and stir evenly with a whisk at low speed for about 8 seconds.

6. After beating the egg yolk liquid, add corn oil three times and continue to stir at low speed. Add milk and stir again at low speed for about 8 seconds. Add the low-gluten flour that has been sprinkled three times and stir evenly with a spatula until no flour is seen. Do not stir for too long.

7. Take out the cooled egg white from the refrigerator and take one-third of the egg white and mix it with the egg yolk liquid and continue to stir evenly. Note that it should be stirred up and down evenly.

8. This is the evenly mixed cake batter. My experience is that the cake batter should not be too dry or too wet. Remember to follow the recipe strictly.

9. When making the cake batter, preheat the oven to 150° for 10 minutes. The oven should be at 150° for 10 minutes. I have tested it several times with a thermometer.

11. After testing, shake it a few times and immediately turn it upside down on a grid to cool. Cover it with a wet towel and demould it after about 2 hours.

12. First look at the picture above after demolding. It’s not sagging and the waist is not tight. Isn’t it cute!

13. Check whether the thickness is complete.
