How to make sweet and sour braised pork chops

1. Wash the pork chops with clean water after purchase, and then soak them in clean water for about 10 minutes to remove the blood.

2. Drain the water and set aside. (The pork chops need to be hammered on both sides with a meat hammer. When I bought them, I asked the stall owner to hammer them for me.)

3. Cut the ginger into shreds, tie some of the green onions into a knot and set aside, and chop the rest for later use.

4.Seasonings used: Japanese white wine, lemon.

6. Put the pork chops into a clean large container, add shredded ginger, green onion knots, white wine, black pepper, 1 tablespoon of olive oil, 1 and a half tablespoons of salt, 2 slices of lemon, and finally beat in the eggs.

7. Mix all the seasonings together and marinate in the refrigerator for half an hour to let the flavors absorb.

8. Prepare cornstarch and sprinkle cornstarch on the marinated pork chops for later use.

9. Pour oil into the hot pan, and when green smoke comes out, put the vegetables into the large pan one by one and fry until both sides are golden brown. Set aside.

10. Drain the oil and set aside.

11. In another pot, add 1 tablespoon of oil, add scallion knots, minced ginger and star anise and stir-fry until fragrant.

12. Turn off the heat and pour in dark soy sauce, rock sugar, light soy sauce, white wine and 2 slices of lemon in turn. Then add the marinade for the pork chops and water into the pot. (Use just enough for half a lemon.)

13. Add the fried pork chops one by one.

14. Put all the ingredients in, cover and bring to a boil over high heat.

15. Turn to medium heat and simmer for about 20 minutes. Finally, sprinkle with chopped green onions when the sauce is reduced.
