1. Knead all the ingredients for the dough into a ball without forming a film. Cover with plastic wrap and refrigerate to ferment for 17 hours.

2. Add all the ingredients of the main dough except butter in the order of liquid first and solid later.

3. Tear the middle dough into pieces and add to the main dough ingredients and knead into a ball.

4. Add butter and knead until it expands.

5. Can pull out transparent film state.

6. Let it ferment directly in the bread bucket until it doubles in size. Take out the exhaust shaping and let it stand. Divide into 8 small doughs, roll into balls and let rest for 15 minutes.

7. Take a small dough and roll it into a long tongue shape. Roll one end thin and sprinkle with raisins.

8. Roll up from the short side and pinch both sides tightly.

9. Put it in a baking tray and let it ferment for a second time until it is twice as large. Put a basin of warm water inside to facilitate fermentation.

10. Brush with egg wash and bake in preheated oven at 160 degrees for about 20 minutes. Temperature and time are for reference only.
