1. Friends who are familiar with Sanshierli know that there are many bottles and basins in a corner of our bread training classroom, which contain different types of yeast. However, not many friends know how to raise and use these yeasts. So today, let me take you to make a Turandot bread fermented with pure natural apple yeast.

3. Apple yeast liquid: 1 apple, 30 grams of sugar, 30 grams of honey, 800 grams of water.

4. Flour: 300 grams of apple yeast liquid, 300 grams of French flour.

5.3. Main surface: 1000g French flour, 60g sugar, 12g dry yeast, 12g salt, 480g ice water, 100g dried cranberries, 100g chocolate drops.

7. Preparation of apple yeast liquid: core and dice the apples, then put them into a sterilized sealed jar together with sugar, honey and water. Leave it at 26-28℃, deflate it every day, shake it 1-2 times, and fermentation is complete after 5-7 days when the apple dices float and there is foam.

8. Weigh the filtered apple yeast liquid, mix it evenly with the French flour, and let it stand to ferment until the volume of the dough becomes significantly larger and there are many large bubbles on the dough, which means the fermentation is complete.

9.3. Weigh the ingredients for the main dough, put the French flour, sugar, dry yeast and salt into the dough mixing bowl, then add all 600 grams of the starter dough. Try not to let the yeast come into contact with the sugar and salt for a long time in advance.

10.4. Turn on the noodle machine at low speed and slowly add the measured ice water. After the powder clumps together, switch to high gear and continue stirring until a slightly thin film can be formed, but it does not need to be particularly thin.

11.5. Add the weighed dried cranberries and chocolate drops and stir well. The temperature after stirring is controlled at around 23 degrees, not too high.

12.6. Put the dough into the fermentation box for basic proofing. The temperature is 28 degrees and the humidity is 50-60%. It takes about 1 hour until the volume of the dough expands to about twice its original volume.

13.7. Divide the dough into 450g pieces, roll them into balls and put them into the fermentation basket covered with dried flour.

14.8. Put the fermentation basket together with the dough into the fermentation box for final proofing. The temperature is 35 degrees and the humidity is 70-80%. It takes about 1 hour, and the top of the dough exceeds the upper edge of the fermentation basket by about 1 cm.

15.9. Turn the dough upside down from the proofing basket into the baking tray and make cuts on the surface.

16.0. Put it into the preheated oven, upper fire 220℃, lower fire 200℃, bake for about 25 minutes.
