How to make 8-inch red date and brown sugar cake

1. Soak the red dates until soft, cut into small pieces and dry them.

2. Separate egg yolks and egg whites, add 25 grams of brown sugar, corn oil and milk to the egg yolks and mix well.

3. Sift the low-gluten flour and add it to the egg yolk liquid twice, mix well into egg yolk paste.

4. Add 60 grams of brown sugar to the egg whites in three batches and beat until small sharp hooks are formed. (Preheat oven to 160°C for 10 minutes)

5. Pour one-third of the egg whites into the egg yolk paste and mix well. Then pour it back into the meringue and mix well. Add the small red dates and mix well.

6. Pour the mixture 10 cm away from the 8-inch mold, gently shake the mold to remove bubbles, and smooth the surface.

7. Bake on the lower layer at 60℃ for 40 minutes. This is after more than ten minutes.

9. After 40 minutes, take the cake out of the oven, drop it gently 10 cm from the ground to remove the heat, and turn it upside down to let it cool.
