How to make pressure cooker cake (waterless)

The method of making pressure cooker cake (waterless) is very simple and you can learn it quickly even without any basic knowledge.

2. Separate the egg white and egg yolk, and put them into water-free and oil-free bowls respectively. The egg white needs a larger bowl, otherwise it will overflow when beating.

Heat the milk (use any method as long as it does not boil, otherwise it will lose nutrients), add the milk powder into the milk and stir to dissolve, then add the rice flour and stir until it becomes a paste. (If it is too dry, add more milk and be sure to stir until there are no lumps.) The mixed rice paste can be cooled by any method to avoid overcooking the egg yolks and forming lumps.

4. Beat the egg yolks and add them to the cooled rice paste.

5. Add flour after stirring evenly.

6. The flour can be added in batches, and then add some more after stirring evenly. The amount can be determined by yourself, just add about the same amount. I added it in four times to avoid uneven stirring and forming lumps.

8. Beat the egg whites and add sugar and beat for a while.

9. Continue to add sugar in batches. I added it three times until it is beaten into hard foam. That is, when the egg beater is lifted, it will form an inverted triangle and the string will not droop, or when the bowl is turned upside down, the egg white will not flow out.

10. Add the mixed batter into the beaten egg white twice and stir. You don’t need to stir it too evenly the first time, but you must stir it evenly the second time.

11. Let the mixture sit for a while.

12. Brush the inner pot of the pressure cooker with oil, and also brush the walls of the pot. Slowly pour the mixture into the middle of the pot and try to spread it as flat as possible.

13. Pressure cooker, cake button, 30 minutes, timer, start

14. When the time is up, let the pressure cooker decompress for an hour, then turn it upside down on a plate, a dish, or anything else. Because I wanted to cut it with a knife, I put it on the chopping board and turned it over.
