Invert sugar syrup~~~A must-have recipe for Cantonese-style mooncakes

Invert syrup~~~The method of making Cantonese mooncakes is relatively simple. Even if you don’t cook much, you can master it through simple learning.

1. Prepare a stainless steel or ceramic pot (do not use iron or aluminum pots), put white sugar into the pot, then pour in water, stir slightly with chopsticks to mix the sugar and water.

2. Remember, do not stir the sugar water during the entire cooking process.

3. Squeeze fresh lemon juice and set aside.

4. Heat over medium heat until the sugar water boils.

5. After the sugar water boils, add freshly squeezed lemon juice and continue cooking over medium heat.

6. Cook until the sugar water boils again.

7. Then simmer over low heat.

8. Remember, you cannot stir the sugar water until the syrup is finished boiling, otherwise all your efforts will be wasted.

9. During the cooking process, some syrup may stick to the wall of the pot. In order to prevent this part of the sugar from producing sugar crystals and affecting other syrups, you can take a brush dipped in water and brush it around the wall of the pot. When the water flows down the wall of the pot, the sugar on the wall can be washed into the pot. (I didn't find a brush here, so I can only use a silicone scraper to demonstrate.)

10. This is the syrup after being simmered on low heat for 20 minutes. At this time, the color of the syrup has begun to darken.

11. This is the syrup after being boiled for 50 minutes. The color is already very dark at this point. It is recommended not to boil it darker than this.

12. Turn off the heat and let cool.

13. The general cooking time is about 40 minutes to 1 hour.

14. The longer the cooking time, the darker the color.

15. Perfect deep amber color.
