How to make Northeastern oil-puff sugar cake

1. Characteristics of Shortbread

The oil-flavored sugar cake, known as the "first point in Western Qin", is a thousand-layer oil-flavored cake. It is characterized by golden color, distinct layers, crisp but not broken, oily but not greasy, and crispy and delicious.

2. How to make shortcrust cake

Stir-fry the pastry: first warm the oil, add the noodles and sugar, and simmer over low heat. Keep frying until the noodles turn yellow, then turn off the heat.

Dough: Use water at about 60 degrees, and make the dough softer, softer than the dough for toast. Knead the dough until the sugar rises and it is smooth, but it is not necessary to knead it until it expands.

How to make large dough: Roll the dough into a round cake, about 5mm thick, spread the fried crispy candies on the cake, roll the dough into a roll, and pinch the two ends tightly.

How to roll small dough: Divide the rolled dough into several portions, and pinch the two ends of each portion of dough tightly to prevent oil leakage.

Put the rolled pancake into the pan and turn it over after a while. When both sides are slightly hard and yellow, add a little more oil and turn it over a few times.

1. Knead the dough with water at about 60 degrees.

2. Stir-fry the pastry: Put oil in the pan, heat it to 70%, add a small amount of flour and stir-fry until cooked.

3. After the pastry is fried, the dough is almost done rising. Roll the dough into slices, not too thin. Spread the fried puff pastry evenly on the dough, roll it up and divide it into equal portions.

4. Crush the white sugar, add a small amount of flour and mix well.

5. Shape the divided dough into small bowls and put sugar in them.

6. Pinch the edges of the dough together, and tear off the remaining piece of dough.

7. When rolling the pancake, alternate between the two sides and roll the center of the pancake.

8. When making pancakes, add oil in small amounts and multiple times. Do not add too much at once. Just fry until both sides turn golden brown.
