1. Main ingredients: local chicken, shiitake mushrooms, red dates and wolfberries.

2. Chop off the head and tail of the native chicken, remove the lymph nodes on the chicken neck, and cut into pieces.

3. Put the cut chicken pieces into boiling water and blanch them to remove the blood, then take them out. (You don’t need to blanch the water, but you need to skim off the foam after boiling)

4. Put clean water in the pot, add the blanched chicken pieces and ginger slices.

5. Add cooking wine and bring to a boil over high heat.

6. After boiling, add the soaked mushrooms, red dates and wolfberries. (The water used to soak the mushrooms can also be poured into the soup to make it more fragrant)

7. Bring to a boil again over high heat, then reduce heat to low, keeping the soup slightly boiling, and cook for 1.5-2 hours.

8. Sprinkle some salt on the stewed chicken soup before drinking. You can also add chicken essence or mushroom essence according to your taste.
