How to make fried noodles with egg crisps

9. Add peanut oil into the pot and heat it to 80% hot, then add the noodles and fry until crispy and golden.

10. Remove from the heat, drain the oil and set aside.

13. Cut the green pepper in half from the middle, remove the seeds, and cut into diagonal strips.

14. Cut the green onion diagonally into horseshoe shapes, and cut the carrots and onions into shreds for later use.

15. Heat oil in a wok, add shredded pork and stir-fry until it changes color.

16. Add chopped green onion and stir-fry until fragrant, then add cooking wine and oyster sauce.

17. Add carrot and onion shreds and stir-fry evenly.

18. Add green pepper and mushroom shreds and stir-fry evenly. At the same time, add some bean paste. This depends on personal taste and can be left out. After adding all the vegetables, stir-fry evenly.

19. Add the noodles and appropriate amount of broth or water. Since no salt is added when adding the bean paste, if the saltiness is not enough, add more salt and stir well. Then cover the pot and simmer until the noodles are well-seasoned and the soup is dry.
