How to make slap fried rice

1. 8-10 prawns, 100g diced carrots, 100g peas, 1 salted duck egg, 2 eggs, and 2 servings of overnight rice.

2. Separate the egg yolk and egg white of the salted duck egg and mash them separately.

3. Dice carrots, blanch peas, and beat eggs for later use.

4. Separate the head and body of the shrimp. Set the shrimp heads aside and remove the shrimp shells and shrimp threads from the shrimp.

5. Boil water in a pot and add a little salt.

6. Put the shrimp into boiling water and cook on medium heat for two minutes until it is 70% to 80% cooked.

10. Add diced carrots into the pan and stir-fry.

11. Add peas into the pan and stir-fry.

12. Put the overnight rice into the pan and stir-fry. Each time, wait until the previous ingredients are fully stir-fried before adding them.

13. Stir-fry until the rice grains are evenly colored. Pour the salted egg whites into the pan and stir-fry.

14. Stir-fry evenly and then add the shrimps into the pan.

15. Stir-fry evenly.

16. Pour the egg liquid into the pot.

17. Continue to stir-fry evenly.

18. Stir-fry until the egg liquid and rice are evenly mixed and the grains are distinct.

19. Remove from the pan.

20. Add a fried shrimp head, it’s very special.

21. Sprinkle with chopped green onions.

22. The rice grains are evenly coated with shrimp oil, salted egg yolk and egg liquid, and they are almost glowing.

23. Take a bite and it’s so delicious that you’ll feel like a god!
