1. Prepare all the ingredients and weigh them: 500g flour, 220g cooking oil or lard, 2 eggs, 140g powdered sugar or granulated sugar, 4g baking soda, 10g sesame seeds

2. Prepare a large mixing bowl with a total volume of nearly 1,000 grams, as large as possible for easier mixing, and pour in cooking oil.

3. If you use lard, it will be more fragrant. Melt the lard into a thin layer like cooking oil. Do not heat it to avoid overcooking the eggs when adding them.

4. Pour in powdered sugar or granulated sugar and mix evenly with a manual egg beater

5. Use a manual egg beater to stir evenly until there are no particles and they are completely melted.

6. Then add two whole eggs, egg yolk and egg white together.

7. Use a manual egg beater to beat the eggs and stir until they are completely blended.

8. Add baking soda to the flour and mix it properly using a plastic spatula or your hands. Try to stir it several times.

9. Stir the egg mixture evenly before pouring in the flour and baking soda mixture, because the oil is light and easy to float on top. After stirring evenly, pour all the flour mixture at once.

10. Use a plastic spatula to stir the flour and egg liquid evenly until there are no flour particles. You can also stir it by hand, which may be more convenient and more even.

11. After mixing, it will be as shown in the picture below. The peach shortbread dough is ready.

12. In order to make the dough uniform in weight, I used a gram scale to weigh the dough and roll it into a ball.

13. Weigh all the batter and roll it into balls for later use

14. Find a large rice bowl or a small soup bowl with a bottom diameter of about 7 cm.

15. If you don’t have a suitable bowl, you don’t have to use it. Just press the dough on the baking foil with your palm into a 2-3mm thick pancake.

16. Place a layer of baking foil or plastic wrap on the bottom of the bowl, then place the rolled dough on top;

17. The baking tin foil and plastic wrap are mainly used to facilitate peeling, which can make the work beautiful and complete.

18. Cover the dough with a layer of baking foil. You can use a plastic knife, a kitchen knife, or a flat material to flatten the dough.

19. After flattening, slowly peel off the baking foil on top. Because there is cooking oil, it will be intact after peeling.

20. Place a piece of baking foil on the baking tray, then turn the dough over and place it directly on the prepared baking foil or on your hand.

21. I think it is convenient to put it in your hand and it is easy to place it on the baking tray.

22. After filling the dough, sprinkle sesame seeds on the dough. You can use black sesame seeds or white sesame seeds. The amount of sesame seeds you sprinkle depends on your preference.

23. Preheat the oven to 170 degrees for 15 minutes. After preheating, put the prepared baking tray into the second layer below and bake for 20 minutes.

24. Because the temperature of each oven is different, it is best to observe the changes when baking for the first time. When the surface is golden brown, it can be taken out of the oven, and then the temperature and time for the next time should be set according to the first time.

25. It is best to turn on the oven to preheat while pressing the dough, so you don’t waste time waiting for preheating.

26. After 0 minutes, with a ding sound, the fragrant and crispy peach shortbread came out of the oven.

27. It will cool down in about half an hour, then you can serve it on a plate and entertain your relatives and friends.

28. The extra ones can be stored in a sealed bottle to avoid moisture, which makes them neither fragrant nor crispy. This is especially true in southern cities where the humidity is high. After half an hour, they can be stored in a sealed bottle.

The food in restaurants outside is likely to contain MSG, which is not healthy. The recipe of crispy peach pancakes is simple. Only by making them yourself can you truly enjoy the delicious taste while being healthy.
