How to make Rongchang cold noodles (sweet and sour version)

Speaking of cooking, don’t forget Rongchang cold noodles (sweet and sour version). It is a very easy dish to make. Onions and ginger are indispensable, and yam powder is needed as seasoning. After it is made, it can be cooked with various ingredients. It tastes very delicious. Friends who like to eat meat can eat it as much as they want without worrying about obesity.

1. All ingredients: cucumber, radish, coriander, onion, ginger, garlic, fresh noodles, and cooked rapeseed oil. Note: (I forgot to put the cooked rapeseed oil in the photo)

2. Add appropriate amount of water to the pot and bring to a boil over high heat.

3. After the water boils, add the noodles and cook for no more than thirty seconds before taking them out of the heat. Otherwise, the noodles will not be chewy and the taste will be affected. Fresh noodles don’t need to be cooked like alkaline noodles or dried noodles, so the timing must be well controlled.

4. After the noodles are out of the pot, place them in front of the fan and keep picking them up with chopsticks to dissipate heat. At the same time, apply cooked rapeseed oil evenly on them so that the noodles will not stick together.

5. These are the noodles that have been cooled and evenly coated with rapeseed oil.

6. Cut radish and cucumber into thin strips, mince ginger and garlic, cut coriander into sections, and chop green onions into chopped green onions.

7. Take a clean bowl and put in all the minced ginger, garlic, white sesame seeds, chili powder and salt. (The chili oil made in this way will be more fragrant!)

8. Heat the pan with cold oil, and turn off the heat after the rapeseed oil boils.

9. Pour rapeseed oil into a bowl and stir with a spoon.

10. Put an appropriate amount of cold noodles on a plate, and then top it with an appropriate amount of shredded cucumber and shredded radish.

11. Sprinkle with peppercorns, MSG, chopped shallots, sugar and salt, pour in appropriate amount of light soy sauce, drizzle with aged vinegar, and then drizzle with chili oil and sesame oil.

12. Sprinkle with coriander, mix well and it is ready to eat.

14. Then I made another big dish, this one with more chili peppers for my husband.

15. Note: I have one pound of fresh noodles here. I have made two plates and there are still a lot left, so I can make another large plate.

Although eating out is convenient, it is not good for your health. Rongchang cold noodles (sweet and sour version) is simple and healthy, and is a good choice.
