Nowadays people are generally under a lot of stress. 1. Put the flour into a bowl for fermentation.

2. Add appropriate amount of warm water and stir into cotton-like state.

3. Knead the dough, apply a layer of oil on the surface of the dough, cover with plastic wrap and let it ferment at room temperature for 50 minutes.

4. Prepare the vegetarian filling: Wash and peel the winter melon.

5. Grate the winter melon into shreds and chop it a few times with a knife. Chop the onion and ginger.

6. Put the filling into a container, add peanut oil and mix well, add salt, five-spice powder, soy sauce, chopped green onion and ginger, mix well and put in the refrigerator for later use. (Squeeze out the water from the winter melon)

7. Poke a small hole in the dough and if it does not collapse, it means it is fermented.

8. Let the dough deflate and relax for 10 minutes.

9. Divide into equal portions.

10. Roll the bun skin into a thick middle and thin edges.

11. Take a bun skin and wrap the winter melon filling in the middle.

12. Wrap it in the way you like.

13. After wrapping them one by one, place them in the steamer and relax for 15 minutes. Steam over high heat then switch to medium heat for 12 minutes and simmer for 3 minutes.

14. The big buns are out of the pot.
