1. Weigh the ingredients and set aside.

2. Separate the egg white and egg yolk in a bowl without water or oil. Make the egg yolk paste first, add fine sugar to the egg yolk and mix well.

3. Add milk and mix well.

4. Add corn oil and beat to emulsify the water and oil.

5. Sift in the low-gluten flour and stir. Do not stir in circles to prevent the batter from forming gluten, which will cause the cake to collapse. Stir until there is no dry powder in the batter.

7. Beat the egg whites and lemon juice with a whisk at low speed.

8. When the mixture is whipped until bubbles appear, add one-third of sugar and continue beating.

9. When the coarse bubbles disappear and only fine bubbles remain, add the remaining half of the sugar and continue beating.

10. When the egg whites are slightly fine, add the final sugar and beat.

11. Beat the egg whites until they are smooth and creamy. Lift the whisk and stop beating when you see the curved hook as shown in the picture.

12. Take one-third of the egg whites and add them into the egg yolk paste and mix well.

13. Then add the mixed paste into the egg white paste and stir. Do not stir in circles, but stir up and down in a gentle and quick manner.

14. When the batter is very fine and smooth, preheat the oven to 170 degrees for 5 minutes.

15. Line the baking tray with baking paper, pour the batter in, shake out the large bubbles, and the surface of the batter will be smooth.

16. Bake in the middle layer of the oven at 170 degrees for 20 minutes. When the time is up, tap the skin lightly and it will be slightly hard and flick it, or use a bamboo stick to poke and pull it out without any wet paste, then it is baked and out of the oven.

17. Place a layer of wax paper on the baking rack, take the cake out of the baking pan and turn it upside down on the rack to dry.

18. Gently tear off the baking paper to allow the cake to dissipate heat. Then cover with baking paper to prevent the cake from drying out.

19. Spread blueberry jam on the cake when it is still slightly warm.

20. Then you can roll it up. When rolling it up, you can use a rolling pin or a slightly thinner plastic wrap tube to press the head of the roll and then continue to roll it up tightly. After rolling up, place in the refrigerator to cool and set.

21. Use a serrated knife to cut off the two ends, then cut into suitable sizes and serve.
