1. The butter softens naturally. Add one gram of salt and beat with a whisk. Add 50 grams of white sugar and beat. Add egg yolks in two additions and beat until combined. Add 140 grams of low-gluten flour and stir evenly until no flour particles are visible. Make into small doses.

2. Roll each small dough into 5 small balls.

3. Preheat the oven to 150 degrees. Place the balls on a baking sheet and flatten with your index finger.

4. Bake at 50 to 170 degrees for 20 minutes.
