How to make Provence vegetable stew

1. Wash and prepare all the vegetables!

2. Peel the tomatoes and dice them, dice the onions, and chop the garlic!

3. Add tomatoes, onions, and garlic to a small bowl of water and put them into a food processor and blend them into a paste!

4. After crushing, pour into the pot, add salt, black pepper, sugar, and tomato sauce, simmer over low heat until thick, then turn off the heat!

5. Now prepare the vegetables and cut them all into round slices, making the thickness as uniform as possible. Carrots are too thin and don’t go well with these vegetables, so they are not included!

6. Find a container that can be placed in the oven, pour the sauce you just cooked into the baking tray and spread it evenly, arrange all the vegetables evenly from the inside to the outside, brush the surface with olive oil, sprinkle some salt and black pepper, preheat the oven in advance, bake at 200 degrees for 20 minutes, until the vegetables are slightly shrunk!

7. Sprinkle some black pepper after baking!
