1. Prepare the ingredients as shown in the picture.

2. Remove the heads and tails of the cowpeas, select the sections, and soak them in light salt water for twenty minutes. Remove residual pesticides. (Be gentle when picking cowpeas, otherwise a lot of cowpeas will fall out)

3. Flatten the garlic with a knife and peel off the shell. Cut off the head and tail. Chop.

4. Wash off the dirt on the surface of the potatoes, peel them, cut them into thin slices, and then cut them into cubes.

5. Wash the cowpeas twice with clean water and cut into cubes.

6. Put the chopped cowpea cubes into the pot and pour enough water to just cover the cowpea cubes. Cook the diced cowpea over high heat.

7. Cook for about a minute and turn off the heat. Pour the diced cowpea into the plug and drain the water. (The water must be completely drained, otherwise the fried cowpea cubes will have a watery taste and affect your appetite)

8. Heat the pan and pour in appropriate amount of peanut oil. Heat the oil until it is 50% hot, add the minced garlic and stir-fry over high heat until fragrant. Reduce heat to low.

9. Add the diced potatoes and a little water. Switch to medium heat and stir-fry evenly. (Potatoes contain starch and will stick to the pan)

10. Add the diced cowpea and appropriate amount of salt. Add a little soy sauce, stir-fry quickly and evenly, then turn off the heat.
