1. The bitter melon I bought is this kind, not Hainan bitter melon. Hainan bitter melon is not suitable for stir-frying like this.

2. Cut lengthwise and remove the seeds.

3. Cut into thin slices, add a small spoonful of salt, mix well, and marinate for 30 minutes.

4. After pickling, the bitter gourd will release water, so squeeze out the water.

5. After washing twice, soak in clean water for 30 minutes.

6. Squeeze out the water again.

7. Chop the millet pepper and put it together with the bitter gourd, and add the fermented black beans as well.

8. Heat the wok, add 50ml of oil, heat it, pour in the bitter gourd and stir-fry evenly.

9. Add soy sauce, stir well, then add a small spoonful of salt and chicken essence, and stir-fry the bitter gourd until cooked. (Bitter melon is easy to ripen, as long as it becomes soft, it is basically cooked)

10. Don’t eat the fried bitter melon right away. It’s better to eat it with the next meal so that the bitter melon can absorb the flavor better. People in Nanchang like to eat bitter melon that is left over from a meal or overnight because it absorbs the flavor better. The finished product I took was taken the next meal, about four or five hours after it was made.
