How to make steamed Thousand Layer Cake

1. Prepare warm water in advance, pour an appropriate amount of baking powder into the warm water and stir until completely dissolved (first pour a little warm water into a small bowl)

2. Put an appropriate amount of flour into a bowl, first pour in step 1, and then continue to pour in the remaining warm water in batches (stir with chopsticks in the direction while pouring) until it becomes cotton-like, and stir until there is no dry noodles.

3. Take out the chopsticks and knead the dough with your hands. Cover it with a lid and let it rise. (The rising time depends on the seasonal temperature)

4. The dough that has been proofed will be two or three times larger than the original one, and will be honeycomb-shaped inside.

5. Sprinkle dry flour on the chopping board, take out the dough, place it on the chopping board, and knead it with both hands until it is smooth. Cover with plastic wrap and let rise for about fifteen minutes.

6. Divide the dough into several small doughs of even size

7. Use a rolling pin to roll the small dough into a rectangle. The thinner the better. Brush with a layer of oil first, then sprinkle with salt and spread evenly.

8. Fold the two sides of the dough inwards, and then fold it again in the middle and cut it into long sections.

9. Make the other small doughs one by one.

10. Put enough clean water in the steamer. Use cold water to wet the cage cloth and spread it on the steamer. Put the ingredients in step 9 in, leaving a two-finger-wide gap between them. Bring to a boil over high heat and steam for 25 minutes. Turn off the heat and simmer for five minutes before serving.
