How to make mutton braised pancakes

1. Prepare lamb leg bones, spine, potatoes, carrots, onions, ginger and garlic

2. Wash and peel the potatoes and carrots, cut into dice, cut the green onions into sections, slice the ginger, and chop the chives for later use.

3. Add water to the soup pot and put in ginger slices and peppercorns. Wash the mutton with clean water and cook it in cold water. Keep skimming off the blood foam until the mutton changes color. Remove the blanched mutton and set aside

4. Heat the oil in a wok, add sugar and fry until the sugar turns brown and bubbles, then pour in the mutton and stir fry until the mutton is fully coated with sugar.

5. Add scallion segments, ginger slices, whole garlic cloves, light soy sauce and cooking wine, and stir-fry until fragrant. Add clean water, add more water, half more than usual when stewing meat. Bring to a boil over high heat, then simmer for 30 minutes

6. While the mutton is cooking, mix the noodles. The hardness is similar to that of dumpling skin. Cover the dough with plastic wrap and let it rest for a while.

7. After the mutton is cooked, there is still a lot of soup in the pot. Pour it out in a small bowl and pour the chopped green onions into the pot.

8. Pour the potato and carrot cubes into the pot and stir-fry, then simmer for 2 minutes.

9. Add salt and five-spice powder and stir-fry evenly

10. Divide the dough into small pieces of about 50 grams each and roll them into thin pancakes

11. Spread the pancakes evenly on the meat and vegetables, and pour the chive broth on top.

12. Use chopsticks to poke 5 or 6 holes in different parts of the pancake, cover the pot and simmer.

13. After about half a minute, the pancake becomes translucent and is cooked.

14. Take out the cooked pancakes and spread them on a flat tea tray. Repeat the process for the remaining pancakes.

15. After the pancakes are cooked, use a 12-inch tea tray to serve the mutton, potatoes and carrots.

16. Place the pancakes on the mutton dish one by one, and a dish of unique Western food is ready.
