How to pickle chili peppers

Small peppers can not only be used as a seasoning in life, but also as a food ingredient to be pickled and eaten. This way of eating will make the taste more unique. Especially in summer, many people will prefer to eat this kind of cold pickled dishes. This is an appetizer that makes people eat more. However, you must use a mustard jar for pickling, so that the taste will be better.

How to pickle peppers

1. Tools: old pickled mustard tuber, rice dumpling leaf handles or straw handles, small stones, spoons, basins, etc.

2. Processing formula: To process a jar of pickled mustard tuber with sour peppers, 10 kg of fresh peppers, 10 g of licorice, 10 g of Sichuan pepper, 250 g of candy and 500 g of salt are required.

3. Process flow:

(1) Rinse the pickle jar, rice leaves or straw, small stones, etc., and dry them for later use.

(2) Pick out peppers with worm holes or rotten holes, then cut off the stems of the best fresh peppers, wash them, and dry them thoroughly.

(3) Pour half a tank of cold water into the mustard tuber, then add sweet potato, pepper, candy, and salt, stir thoroughly, and let it sit for a few days.

(4) When the water in the tank has a slightly sour taste, you can add the fresh chili peppers. Make sure that the peppers are completely submerged in the water and not exposed above the water surface. After compacting the peppers, cover them with rice leaves or straw, and then press on top with small stones.

(5) After 10 days or so, the peppers will have become sour and can be taken out and put on the market or packaged for sale. After taking out the peppers, you can add fresh peppers again, so that you can cycle the process and avoid wasting raw materials.

4. Notes:

(1) After washing peppers, radishes, beans, etc., be sure to dry them thoroughly and never put them into the jar with any moisture, otherwise it will affect the shelf life and product quality.

(2) After putting the fresh peppers into the jar, periodically reach into the jar to stir it. If some white foam appears at the mouth of the jar, remove it immediately.
